What does this actually mean - "While I respect the Judeo-Christian ethic, as well as the eastern.......??

Hyde is saying that he respects the core teachings of religions (Love, forgiveness, peace, etc.), but not the way they are twisted by certain religious people to justify bad actions. For him, by attending church, he would be supporting the misinterpretation of the teachings, which he does not want to do.
